12 Days and 12 Ways Day 5: Homemade Beef Sausage

Many people use ground beef in their weekly menus and are well aware of the versatility of the meat, but so many more do not know that you can season the beef to a sausage and use in place of pork sausage in many recipes and meals. This is a cure free recipe that your family (and wallet) will love. It comes in really handy in our house when we have quite a bit of ground beef in the freezer but are over the traditional tacos, burgers and sloppy joes. Try something new this season, we bet it will become a staple in your house.


  • 2 lbs ground beef
  • 2 ½ tsp sea salt
  • 1 tsp freshly ground black pepper
  • 1 tsp parsley
  • ½ tsp coriander
  • 1 tsp fennel seed
  • 1 tsp marjoram
  • 1 tsp sage
  • ½ tsp thyme
  • ¼ tsp red pepper flakes
  • 1 tbsp Minced Garlic
  • 1 tbsp Dried Minced Onion

1.       Measure all of your seasonings and mix together.

2.      Combine meat and seasoning, mixing well. Bare hands work best.

3.      Cover and let the flavors meld for 12-24, hours for best results.
